How to make chocolate
Ingredients: Cocoa powder,cocoa butter, sugar and milk.
According to Peter Higgins of Purdy’s chocolate company you have to follow many steps in order to make the perfect chocolate of your choice.
Method:
* The first step is getting cocoa beans from a cocoa tree.
* The cocoa tree comes from the most warmest region.
* 70% of the cocoa comes from west Africa.
* When the cocoa beans are ready you put it in the sun to dry and to develop the flavour.
* The beans are blended dried, and the shells are broken only leaving the nibs.
* The nibs are grounded to a liquid cocoa mass.
* The mass then creates cocoa powder and cocoa butter.
* Sugar, milk and lecithin are then added and blended together and are put into series of rollers.
* Conching is the last preparation. The ingredients are carefully blended and monitored into a large tank for a final flavour development.
* Then you put the chocolate into a block and there is your perfect chocolate.
